Cook with sri Lanka coconut sambol
Coconut sambol is a classic Sri Lankan condiment! Here's a simple recipe to make it:
Ingredients:
- 1 cup grated coconut
- 2-3 dried red chilies, crushed or 1-2 fresh green chilies
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Maldive fish (optional, or use anchovies or omit for vegetarian)
- Salt to taste
- 2 tablespoons lime juice
- 1 tablespoon vegetable oil
Instructions:
1. Heat oil in a pan and sauté the onions until translucent.
2. Add chilies, garlic, and Maldive fish (if using). Cook for 1 minute.
3. Add grated coconut and stir well.
4. Cook on low heat, stirring frequently, until the coconut is lightly toasted.
5. Season with salt and lime juice.
6. Let it cool, then blend to desired consistency.
